Scrambled Eggs with Onion and Cheese

Eggs are a versatile ingredient and can be eating at any meal. Egg yolks are a great first food for a baby over 6 months, providing protein and many other vitamins and minerals. Recipes which include eggs are numerous and once a baby is able to eat egg whites as well, the diversity becomes even greater!

The following recipe for scrambled eggs with onion and cheese is a great way to start the day, for a baby entering the weaning phase and for mama too! Packed with energy and flavour, it can be served for any meal of the day provided baby has already been given the green light to eat egg whites.

Ingredients

  • 2 large eggs
  • 2 T whole milk
  • 1/2 small onion, diced
  • 1 T wheat germ
  • 3 thin slices of Swiss or cheddar cheese
  • 1 T butter

Method
In a large bowl, whisk all ingredients except for the cheese and butter, together.
Heat a non-stick skillet over medium-high heat and add butter.
Once butter has melted, pour in egg mixture and stir with a spatula until fully cooked, about 2 minutes.
Lay slices of cheese over the scrambled eggs with onions and cool slightly before serving to baby.
Makes great figner food (a little messy), or great practice with the spoon food!
