Blueberry Cobbler

Blueberries are very tasty fresh or cooked.  These berries are very good for you because they are packed full of vitamin C, manganese, antioxidants, as well as being high in fiber. The blueberry freezes well for later use.

Cooking time: 45 minutes

Prep time: 15 minutes

Serves: 7-8

Ingredients

  • 3 cups frozen blueberries
  • 1 tablespoon cornstarch
  • 2 tablespoon lemon juice
  • 1 cup flour
  • ¾ cup sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 3 tablespoons melted butter
  • ½ cup milk
  • ¾ cup hot water

 Method

1. Preheat oven to 350 degrees.

2. Pour blueberries in 8 inch baking dish.

3. Spoon cornstarch, and lemon juice over berries, set aside.

4. Combine flour, ½ cup of sugar, baking powder, and salt, stir.

5. Add milk and butter, stir.

6. Spoon batter onto berries.

7. Pour water over the top.

8. Cover with remaining ¼ cup sugar.

9. Bake 45 minutes, or until cobbler is golden brown.

10. Serve warm.
