Homemade Vegetable Soup

Talk about your comfort foods, this recipe for vegetable soup is the recipe my grandmother used to make, and it’s still a favorite soup in my house to this day.

This recipe has beef stew meat in it, but it is just as good without, if your not a big meat eater like me, but my family wants the meat and thats the way the recipe was originally, so thats the way I prepare it. I cook it in my crock pot all day, and the flavors all blend into a smooth tasting soup. If you are lacking time, you can use canned vegetables instead of fresh, it really taste just as good.

Cooking time: 4 hours on high or 8 hours on low
Preparation time: 10 minutes
Serves: 6-8

Ingredients

  • 1 pound beef stew meat
  • 3 potatoes, chopped into bite size pieces or 1 can potatoes
  • 3 carrots sliced or 1 can, drained
  • 1 cup corn or 1 can, drained
  • 1 cup peas or 1 can drained
  • 1 cup green beans or 1 can, drained
  • 1- 28 oz. can stewed tomatoes
  • ½ teaspoon basil
  • 1 bay leaf
  • Salt and pepper to taste

Method

Set slow cooker, and line with slow cooker liner bag.

Add all ingredients and stir.

Cook on low for 6-8 hours or high for 4 hours.
