  • 2-3 cups baby spinach leaves
  • ½ cup mandarin oranges
  • ¼ cup sliced onions
  • ¼ cup walnuts, chopped
  • ¼ cup shredded Parmesan cheese
  • 1 teaspoon orange marmalade
  • 1 tablespoon apple cider vinegar
  • ¼ cup olive oil
  • Salt and pepper


1. Divide spinach leaves between two salad plates.

2. Place oranges on the leaves.

3. Slice onions and add to salads.

4. Sprinkle with walnuts and cheese.

5. Whisk together marmalade and vinegar.

6. Whisk olive oil into the mixture.

7. Drizzle over salads.

8. Salt & pepper.
