What goes better at a picnic lunch or barbecue dinner then a side of potato salad.

Picking up your potato salad at the super market is fast, but definitely not the best. Homemade potato salad is better cooked the day ahead, because the flavors continue to blend into a delightful taste. Just remember to keep it cool, and out of the sun. Bring some beans and and veggies, and your sides are complete.

  • 7-8 medium size potatoes
  • 4 eggs
  • ½ cup sweet pickle relish
  • ½ cup finely chopped celery
  • ¼ cup finely chopped onion
  • 1 cup mayonnaise ( add more if potatoes are dry)
  • ¼ cup mustard
  • Salt and pepper to taste


Cook potatoes in microwave oven until a fork can pass easily pass through ( around 10-12 minutes), cool.

Boil eggs for 10 minutes,cool.

Peel and cut potatoes into bite size pieces in a large bowl.

Add all other ingredients.
