Wild Rice Salad with Shrimps and Tuna Fish

Rice Salad recipes are gaining popularity all over the world specially because of its variety of flavours, compatibility with other regional ingredients and easy to prepare, quick recipes.

Rice salad could be an excellent idea for an American family picnic, a perfect supporting dish in evening barbecue parties or as a light and healthy lunch or dinner meal after a tiring day.

The following recipe is seafood rice salad where wild rice is experimented with fresh shrimps and Tuna.

Ingredients:

  • 4 cups water
  • 2 cups wild rice
  • 6 oz shrimps
  • 1 can white tuna fish, drained
  • 1/3 cups onions, finely chopped
  • 1 cup celery, thin sliced
  • 3 medium sized eggs
  • 1 cup mayonnaise dressing
  • 1/2 cup salad tomatoes (grape tomatoes)
  • 1/3 cup fresh cucumber, chopped
  • 1/3 cup chopped pickle
  • 1/4 cup cherry peppers, diced
  • 3/4 tsp lemon juice
  • Salt and pepper as per taste
  • 1 tbsp fresh cilantro leaves, chopped
  • Salad greens

Method:
Cook the rice at least 3-4 hours in advance and kept aside. Clean, shell and cook the shrimps with little salt at least 3 hours in advance. Hard cook the eggs and chop them. Make sure rice, shrimps and eggs all should be cooled when you start making salad. Slightly mix shrimps, rice and tuna together in a large mixing bowl. Then add chopped eggs and rest of the ingredients into the bowl and mix all together slowly using a spoon.

Let the salad chill in the refrigerator for some time. Serve on salad greens and garnish the salad with fresh chopped cilantro before serving. Try out this quick rice salad recipe today at home.
