Vinaigrette is a kind of salad, that is very delicious and healthy as well as good looking. Its rich red color will ornate the party table as well, as an every day meals.


  • 2 medium beets
  • 3 potatoes
  • 1 onion
  • 2-3 pickled cucumbers
  • 1 carrot
  • Greens
  • ½ cup of canned green peas
  • 1-2 tablespoons of sunflower oil (it can be not refined)


Boil the beets, carrot and potatoes until they will be easily pierced with fork. Then pour cold water and peel them. Cut in cubes beets, carrot, potatoes and cucumbers. The smaller pieces will be the better. The onion should be cut as finely, as possible, but do not grind it however. Mix up all the ingredients and add sunflower oil. If needed you can also salt it some more (if cucumbers are not very salted). Actually onion, green peas and greens are optional ingredients, if you do not like some of them, do not put them in the salad.
