Saffron Rice

Saffron rice is one of the special Northern India recipes, which is also known as “kesar pulao”. The Saffron Rice recipes are cooked with saffron, long grained white rice and spices. You can add spices as per your taste. Saffron rice is found in the cuisines of many countries Thailand and Turkey. It is wonderful yellow flavored rice which is a very easy and a quick recipe. It makes the dinner an extra special and exotic. Its aroma will attracts us to eat even more.


  • 200g Basmati rice
  • 6-8 streaks of saffron /Kesar
  • 4 tablespoons of clarified butter / Ghee
  • ½ tablespoon cumin seed
  • 5 whole Black pepper
  • 2 Bay leaves
  • 3 whole cinnamons
  • 2 whole cloves
  • 2 large cardamom ( crushed)
  • 3 green cardamom
  • 1 cup cashews
  • 1 cup almonds
  • 1 cup raisins
  • Salt – one small spoon (or as per taste)
  • 2 tablespoons of finely chopped coriander leaves
  • 1 tablespoon milk
  • 4 cups of water

Cooking time: 30 minutes.


Wash the rice thoroughly and soak them in water for 1 hour. Also soak kesar in one tablespoon of milk for half an hour. Dry roast all the nuts in a frying pan for 2 minutes. Keep them aside. Now put the ghee in a frying pan and heat it in medium flame. Add cumin seed and bay leaves into the ghee or clarified butter . After it sputter , add all the whole spices ,like black pepper, cloves, large and green cardamom and cinnamon sticks .

Fry till the a nice aroma comes out of these spices. At this stage add long grained rice to this mixture and fry for another 2 minutes. Add the soaked saffron with milk and water into the mixture. Always add the double volume of water than the quantity of rice .Now take out all the contents and put into a pressure cooker and let it cook for 12 minutes, until the first whistle. After one whistle turn off the burner. Reduce the pressure in the cooker so that the rice doesn’t get overcooked. Otherwise desirable separated rice won’t be cooked.

Open the cooker after it has released all the pressure. Take out the contents in a serving bowl. Saffron rice is ready to be served .It is eaten as such without any side dish. But could be served with chicken curry. Always serve saffron rice hot.
