Hot and sweet Mango Chicken in Pineapple sauce

Cuisine of Mexico have variety of tasty chicken recipes prepared in their own authentic way. The following Mango chicken recipe is also cooked in pure Mexican style. This juicy chicken casserole has wonderful mix of sweet, fruity and spicy flavors. This chicken recipe is one of the best enhancements done with an average Mexican chicken casserole. Fresh cooked boneless chicken is combined with black beans, rice, onion and plenty of pineapple -tomato sauce, the aroma is able to attract anyone’s taste buds.


  • 3 cups fresh boneless chicken breast, cooked & chopped into small pieces
  • 20 oz (2 small cans) canned cream of chicken soup
  • 1 large red onion, diced into small pieces
  • 12 oz fresh black beans (soaked overnight, boiled and drained) or 1 can canned black beans
  • 1 large mango, peeled and chopped
  • 0.5 lb fresh red tomatoes, chopped finely
  • 3/4 cup fresh or canned pineapple, crushed and drained
  • 3 tbsp fresh cilantro leaves, finely chopped
  • 2 1/2 cups shredded cheddar cheese
  • 1 1/2 cup cooked rice
  • 8 corn tortillas
  • Fresh ground black pepper as per taste
  • Crushed red pepper as per taste
  • Salt as per taste


Preheat oven at 350 deg F. Mix together chicken soup, cilantro leaves, tomatoes and pineapple in a large mixing bowl. Add some salt, black pepper and red chili pepper into the prepared mixture and stir all the ingredients well together. Sauce is ready.

Lightly grease a large baking pan (13*9 or larger size) and spread two tortillas on the bottom of the pan. Spread one third of the total black beans, cooked rice, diced onion, chicken and mango over the tortilla then pour one fourth of the prepared pineapple -tomato sauce over it. Again spread two more tortillas over it and spread half of the remaining beans, onion, mango, rice and chicken on the tortilla then pour one third of the remaining sauce over it. same way again spread two more tortillas and spread remaining mixture over it then pour half of the left sauce, over the tortillas. Finally put two more tortillas and pour the left sauce over it.

Cover the baking pan with the aluminium foil and let it bake for next 50-60 minutes until cooked properly. When done, turn off the oven , remove the foil cover and sprinkle cheddar cheese over the dish. Again cover with foil and wait for next 5-10 minutes. Slice it into small wedges and serve hot with yoour favorite sauce or salsa.
