Authentic Chinese Fried Rice (Yang Zhou Fried Rice)

Yang Zhou Chinese Fried Rice is one of the most popular Chinese fried rice recipes. It is a Cantonese style wok fried rice dish available in most Chinese restaurants in North America, Australia, Hong Kong, and the Philippines. Apart from cooked rice, the other basic key ingredients of Yang Zhou Chinese Fried Rice are : barbecued pork, cooked shrimps, scallions, scrambled eggs and peas. The barbecued pork gives a unique sweetish flavour to rice.

Following Yang Zhou Chinese Fried Rice recipe is made from all basic ingredients used in this classic Chinese fried rice recipe mentioned above with the spicy twist of garlic and ginger.


  • 3 cups pre cooked rice
  • 1/2 cup Chinese barbecued pork
  • 1/2 cup shrimp
  • 2 medium sized eggs
  • 1/2 cup green peas
  • 2 cups chopped scallions
  • 2-3 garlic cloves, minced
  • 1tbsp ginger, thin sliced
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp soy sauce
  • 1/2 tsp pepper
  • Cooking oil for frying

Pre cook the rice at least half a day in advance and set aside. Clean and shell the shrimps, sprinkle 1/4 tea spoon salt and 1/4 teaspoon sugar over it to marinate and keep it aside for 20 – 25 minutes. Heat wok ( a big round-bottomed Chinese cooking vessel) over medium heat and pour approx. 4 -5 tbsp cooking oil into it.

When oil is warm, add garlic and ginger in the oil and fry for few seconds then add marinated shrimps into it and stir fry them till shrimps change its color and start leaving the oil into the vessel.

Slightly beat the eggs in a separate bowl, pour it over the shrimps and scramble slightly. Add the rice, soy sauce, pepper, 1/2 tsp salt & 1/2 tsp sugar into the wok and stir fry all the ingredients together on high medium heat for a minute. Now, add peas and pork to the rice and fry all the ingredients together for next 8 -10 minutes. Add scallions, mix it for 2-4 seconds with rice and turn off the heat.

Spicy Yang Zhou Chinese fried rice is ready to serve.
