Authentic Chinese Fried Rice Recipe

One of the secrets of an authentic Chinese fried rice recipe is that the ingredients are cooked separately – helping them maintain their distinct flavours – and then combined in the final stages of cooking. There is no question that it is easier to do this if you remove each ingredient from the pan after cooking and then add it back at the end. But, the choice is up to you. If you leave all the ingredients in the pan, make sure each is cooked before adding the next ingredient.

Ingredients:

  • 4 cups cold cooked rice
  • 8 ounces cooked chicken
  • 2 eggs
  • 1/2 cup green peas
  • 1 medium onion diced
  • 1 green onion diced
  • Seasonings according to taste
  • Light Soya Sauce
  • Oyster sauce
  • Salt
  • Pepper
  • Oil for stir-frying, as needed

Preparation:

Beat the eggs lightly, add a dash of salt. Chop the chicken meat and dice both the onion and green onion. Heat the wok and put some oil. When the oil is ready, put 1/2 of the egg mixture into the wok and cook over medium heat, turning over once. Cook the other half in the same manner. Cut the egg into small strips and keep aside for later. Stir-fry the onion on high heat for a few moments, remove and set aside. Do the same with the green peas.

Add the oil and put the heat to medium and stir-fry the rice. Put in the Soya sauce, salt, pepper and oyster sauce. Add the chicken, onions and green peas and combine thoroughly. Serve the Chinese fried rice with strips of egg on top and the green onion as a garnish.
