Great Blueberry Muffins

Following along the theme of ‘my daughter won’t stop eating blueberries’, (not that I am complaining) here is another way to offer her Blueberries – just in another wrapping!

This is a simple recipe for blueberry muffins which you can prepare easily at home.

  • Preparation and cooking 50mins
  • Makes 12

Ingredients

  • 150g/5oz Plain Flour
  • 150g/5oz Wholemeal Bread Flour
  • 1 tbsp Baking Powder
  • Pinch of Salt
  • 75g/3oz Caster Sugar
  • 1 Egg
  • 300ml/10fl.oz. Milk
  • 2 teaspoon Lemon Juice
  • 90ml/3fl.oz. Vegetable Oil
  • 100g/4oz Fresh Blueberries

Instructions

Preheat the oven to 200C, 400F, Gas mark 6 and lightly oil a 12 hole deep muffin tin.

Mix together the flours, baking powder, salt and sugar in a mixing bowl. Then take a jug and combine together the egg, milk, lemon juice and oil. Make a well in the centre of the dry ingredients and then gradually mix in the liquid from the jug, until all the ingredients are almost combined.

Add the blueberries and quickly mix in : try not to over-mix.

Fill the muffin tin with the mixture and bake in the oven for 30 – 35 minutes. Cool on wire racks, or if you don’t have wire racks ( as I don’t) the racks/ wire shelves from your oven.
