<p>Mexican haystack is a fun meal for young and old alike.</p>
<p>It is very easy to make. All you have to do is layer your ingredients on the plate. Kids love it because it is fun and taste good too. You can make it with chili, ground hamburger or ground turkey with taco seasoning. The choice is yours. All you have to do is stack.</p>
<p><strong>Cooking time:</strong> 10 minutes to brown meat<br />
<strong>Preparation time:</strong> 15 minutes<br />
<strong>Serves:</strong> 4</p>
<h3>Ingredients</h3>
<ul>
<li>1 pound ground turkey</li>
<li>1 pack of taco seasoning</li>
<li>Tortilla chips, slightly broken</li>
<li>1 cup chopped lettuce</li>
<li>1 cup chopped tomatoes</li>
<li>1 cup grated cheese</li>
<li>½ cup sour cream</li>
</ul>
<h3>Method</h3>
<p>Brown turkey.</p>

<p>Add seasoning according to directions on package.</p>

<p>Place chips on plates.</p>
<p>Layer the meat mixture on top of the chips.</p>

One such popular Mexican meal  is quesadilla. &#8220;Queso&#8221; means cheese in Spanish and a <a title="Quesadilla" href="http://www.annabelkarmel.com/recipes/quick-easy/quesadilla" target="_blank">quesadilla</a> means  a toasted tortilla filled with melted cheese. But, quesadilla is not just  limited to cheese rather there are varieties of <a title="Recipes" href="http://www.annabelkarmel.com/" target="_blank">recipes</a> to make quesadilla.  This is one of the quick and easy to prepare spicy <a title="Chicken Recipes" href="http://www.annabelkarmel.com/recipes/babies-9-12-months/chicken-recipes" target="_blank">chicken recipes</a> made with crunchy veggies  and tortillas is an excellent idea for a mid time meal or dinner.</p>
<p>This will  make your appetite feel full and delight your taste buds too. So, here goes  this wonderful chicken recipe.</p>
<p><strong>Ingredients</strong></p>
<ul>
<li>6  large floor tortillas</li>
<li> 0.5 lb sharp cheddar or monterey jack cheese, grated</li>
<li>1 1/2 Cup chopped chicken pieces</li>
<li>4  &#8211; 5 tbsp olive oil</li>
<li>1 small red onion, chopped</li>
<li>1 tbsp black olives, sliced</li>
<li> 2 medium sized tomatoes, diced</li>
<li> ¼ cup chopped red bell pepper</li>
<li> ¼ cup chopped green pepper</li>
<li> 1/4 cup chopped green/red cabbage</li>
<li> ¼ cups chopped green onions</li>
<li> 2 tbsp chopped cilantro</li>
<li>2 tsp minced garlic</li>
<li>½ tsp fresh ground black pepper</li>
<li>½ tsp crushed red chili</li>
<li>Salt as per taste</li>
</ul>
<p><strong>Method</strong></p>
<p>Heat a frying pan over low &#8211; medium heat and drop 2 tbsp of olive oil  into it.</p>
<p>When oil is warm, put garlic and let it cook for ½ minute. Then add  chicken pieces, sprinkle salt over it and mix. Cook the chicken thoroughly by  stirring it in often. Add all the veggies except cilantro and stir fry. Turn  the heat off and keep the filling mixture aside.</p>
<p>Heat a cast iron on non- stick skillet over medium heat and spread ½  tsp oil over it. Place a tortilla on the skillet. Flip it few times till  tortilla starts getting floppy for approx 15 seconds. Carefully place cheese on  the tortilla leaving the edges because it will melt and automatically reach to  edges. Spread thin layer of chicken-veggie filling mixture and olives over  cheese. Also sprinkle little amount crushed red peppers, black pepper and  chopped cilantro over veggie mixture. Fold the tortilla same as omelet and  press it down with a flat spoon or spatula.</p>
<p>When the Cheese has melted,  flip over the quesadilla to other side. Cook for approx 1 minute. Remove the quesadilla from  the skillet and cut it in form of serving size wedges. Serve the quesadillas  along with sliced iceberg lettuce, your favourite salsa and some sour cream.</p>
