The Healthy Farmer's Breakfast

By making a few changes, you can still enjoy eating your all in one, big farmers breakfast without all the guilt that comes from the extra calories and fat. Start out with just a splash of olive oil in your frying pan. Add your favorite vegetables, turkey sausage, eggs and fat free cheddar cheese. There you have your breakfast, it’s easy, but filling and delicious to eat all in one skillet.

Cooking time: 10 minutes
Preparation time: 10 minutes
Serves: 2-3

Ingredients

  • 1/8 cup olive oil
  • ½ cup diced onions
  • ½ cup diced green peppers
  • ½ cup chopped turkey sausage
  • 4 large eggs
  • ½ cup fat free grated cheddar cheese
  • Salt & pepper to taste

Method

1. Spray pan with non-stick cooking spray.

2. Cover bottom of pan with olive oil.

3. Cook vegetables till softened.

4. Add sausage, cook till hot.

5. Pour whipped up eggs over meat and vegetables.

6. Stir mixture until egg is cooked through, remove from heat.

7. Divide mixture onto serving plates.

8. Cover with cheese.
