  • 1 pound skinned chicken, breast cut in bite size pieces
  • 1 cup sliced green peppers
  • 1 cup red sliced peppers
  • 1 cup sliced onion
  • 1 cup broccoli cut in bite size pieces
  • 1 cup cauliflower in bite size pieces
  • ½ cup mushrooms
  • ½ cup sliced carrots
  • 2-3 tablespoons balsamic vinegar
  • 2-3 tablespoons olive oil
  • Salt and pepper

Method

1. Spray the pan with non sticking spray.

2. Add the vinegar and oil to the pan. Set on medium.

3. Place all the vegetables in the pan and allow to simmer for a minute or two.

4. Stir in the chicken.

5. Cook while siring occasionally for 10 more minutes, or until the chicken and vegetables are tender.
