Potatoes are such a versatile vegetable. They can be prepared into so many variations, that it would be hard to ever get tired of potatoes.

From French fries to mashed potatoes, most all potato recipes are very good, and fun to make. Potato wedges are a delightful way to add spice to your potatoes. They are a fun finger food at parties or at home. Enjoy them with the dip of your choice. Some prefer ketchup, others ranch dressing, or no dip at all. The choice is yours. Just enjoy.

Preparation time: 10 minutes
Serves: 3

Ingredients

  • 3 – 4 medium potatoes
  • 4 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • ¼ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup grated Parmesan cheese

Method

Microwave potatoes about 5- 8 minutes, let cool.

Peel and cut each potato into about 6- 8 wedges.

Place wedges in a shallow bowl, spoon olive oil over each wedge, turning to insure each piece is covered.

In another bowl combine all dry ingredients, stir.

Cover each wedge one at a time in the dry seasonings.

Place wedges in medium high frying pan sprayed with cooking spray.

Fry for about 5- 10 minutes or until golden brown.
