Light Chocolate Chip Cookies

These cookies are baked without sugar, using a sugar free sweetener called Splenda but, you can use any brand of sugar free granulated sweetener.

The cookies are big and chewy. They might be best when warm, but they will still satisfy your taste buds when cooled. For the best texture leave on the cookie sheet until cookies are completely cooled.

You can adjust the amount of chocolate chips according to your taste.

Preparation time: 15 minutes
Serves: 18 large cookies

Ingredients

 

  • 2 cups plus 2 tablespoons flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ sticks butter, melted and cooled
  • ½ cup Splenda’s brown sugar blend
  • ½ cup Splenda
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 ¼ cups semi sweet chocolate chips

Method

Preheat oven to 325 degrees.

Cover two cookie sheets with parchment paper.

Combine flour, baking soda, salt, butter and sweeteners until well blended.

Beat in eggs, and vanilla.

Add chocolate chips, and stir.

Shape ¼ cup of batter into 18 balls.

Bake 15 minutes or until light golden brown.

Cool the cookies on the baking sheets before removing.
