These days many people forgo fried potatoes because of the extra added fat.

But by cooking with a non-stick skillet or griddle, and a very small amount of olive oil, you can enjoy fried potatoes without any guilt. You can add onions, or sausage crumbles, or just alone, the choice is yours. But It’s hard to find a better comfort food than plain old fried potatoes.

Preparation time: 5 minutes
Serves: 2-3

Ingredients

  • 2 large potatoes
  • 2 tablespoons olive oil
  • salt and pepper

Method

Peel and wash potatoes.

Slices the potatoes thin.

Microwave for 25-30 seconds, on a microwave safe plate.

Apply 2 tablespoons of olive oil on the griddle.

Cook potatoes for about 10-15 minutes, turning as they brown.
