Spinach Egg Scramble

This recipe is a combination of spinach and egg. Spinach is a rich source of iron, so this dish is highly nutritious. Spinach can also be replaced by other greens. Those who do not like greens will love it with the combination of egg.

Serves: 4-5

Ingredients

  • 6 eggs
  • 1 bunch spinach
  • 3 onions chopped fine
  • 6 green chillies chopped fine
  • 2 tbsp refined oil
  • A pinch of turmeric
  • Salt to taste
  • 1 inch cinnamon
  • 3 cloves
  • Few curry leaves
  • ½ tsp black pepper powder

Method

Heat oil in a pan. Add cloves and cinnamon. Saute for a minute. Fry onions with curry leaves till soft. Then add chopped green chillies and fry for few minutes.

Wash spinach and drain the water completely. Chop the spinach and add it to the pan. Mix with the onions and fry till raw smell goes and spinach is cooked. All the water should evaporate.

Meanwhile beat eggs in a bowl and set aside. Now add turmeric and salt to the spinach and mix well.

Stir in beaten eggs and cook over a low flame. When the eggs are half done, stir continuously so that spinach and eggs mix up and form a scramble. Cook till the eggs are fully done. Sprinkle pepper powder, mix well and remove from fire.
Serve hot with rotis.
