Christmas Hot and Cold Ice Cream

This is a lovely meal to serve at Christmas time to wow the family – a hot, crispy, sweet desert with cold smooth ice cream in the middle. This recipe calls for use of bananas, but I like to add in a handful of toasted pine nuts in, too. You could substitute the honey for golden syrup, or brown sugar.

Just make sure that you use exact quantities of ingredients to ensure it doesn’t all disintegrate into a sticky, gooey, mess. If there’s any dish to add to your stock of Christmas recipes, this should be one.

Preparation time: 30 minutes
Freezing time: overnight, ideally
Cooking time: a few minutes

Ingredients

  • 2 bananas
  • 4 figs, halved
  • 30g butter, melted
  • 4 filo sheets
  • Icing sugar to dust
  • 4 scoops of ice-cream
  • 4tbsp honey
  • Mint sprigs

Method of Preparation

Chop each filo sheet in half, brush with butter and overlap. Brush the top with more butter and add a scoop of ice-cream to the centre of the sheet.

Scoop the filo sides up, scrunch at the top to create a parcel that is airtight, sprinkle with icing sugar and brush with a little more butter. If you are not going to use these right away, pop them in the freezer so they don’t get melted.

In a pan, heat a little of the butter. Chop the bananas and the figs, sprinkle with a bit of sugar, and sauté until they are golden. These will be lovely to have on the side of your ice-cream parcels. You could also serve pineapple sautéed in this way. Cook it in a little bit of Malibu liquor for ultimate coconut flavour.

Pop your filo parcels in the oven at 220C for two minutes. In this time, the pastry should cook and crisp up nicely. Don’t cook for any longer, because the ice-cream will melt and make the pastry gooey and not nice.

Take them out of the oven, and whilst they are still warm, drizzle them with the honey. The honey will permeate into the filo whilst still warm and make it all taste lovely. Put a sprig of mint into each parcel, drizzle with a little cream if you want it and possibly some toasted nuts.

Another way to enjoy this is trying home-made ice cream, or something that’s a bit different like a mango sorbet, or a lemon sorbet. Lemon sorbet in the middle drizzled with Limoncello liquor is absolutely delicious.  Sprinkle with some vanilla sugar for added wow.
