Easy Chinese Chicken Pot Noodle Recipe

Pot noodles are an easy and delicious method for cooking and serving vegetables and for using up left over meats.

There are many different variations and styles of pot noodles with most recipes taking influences from Asia, the continent most associated with pot noodles.

The following Pot Noodle recipe takes inspiration from Chinese cooking, using the flavors of soy sauce, sesame and ginger as well as the brief cooking time which leaves the vegetables in a semi-crisp and fresh state with their colors vibrant.

This recipe for Chinese chicken pot noodles is an inexpensive and easy way to add nourishing vegetables to a meal. Children enjoy eating these pot noodles from soup cups or mugs and a fun and exciting element can be added by serving them with chopsticks (for those not adept with this Asian style of noodle eating), and Asian soup spoons.


  • 1 package Chinese style dried egg noodles (10-12 oz dried)
  • 1 Liter Chicken stock
  • 2 T Soy Sauce
  • 1 t sesame oil
  • 1 clove garlic, finely minced
  • 1/2 cm length of fresh ginger, peeled and finely grated
  • Handful of sugar snap peas, cut on a bias
  • 1 large can (8oz), sweet corn kernels, drained
  • 2 heads of bok choy, sliced thinly
  • 2 full chicken breasts, cooked and shredded
  • 2 spring onions/scallions, sliced thinly
  • 1 t corn starch
  • 2 t cold water
  • Salt and Pepper to taste


Cook the noodles according to the instructions on the package. If using precooked noodles, omit this step. Drain noodles and set aside.

Pour stock, soy sauce, sesame oil, garlic and ginger into a large saucepan/soup pot. Bring to a boil over medium high heat. Add sugar snap peas, corn and bok choy and reduce heat to medium. Simmer soup for about 5 minutes. Add shredded chicken and cook for another few minutes until the chicken is warm

In a small dish, mix the corn starch with cold water until there are no lumps. Add this mixture to the soup and simmer for about 3 minutes until the soup thickens up slightly.

Add noodles and heat chicken pot noodle soup through.

Taste, and adjust seasoning with Salt and Pepper as needed.

Divide pot noodles between 4 serving bowls and sprinkle spring onion/scallion on top

Can be served with Asian style hot chili garlic sauce to add heat if desired.
