Crunchy, Spicy Oven Baked Chicken Chow Mein

Noodles are an essential ingredient and staple in Chinese cuisine. There are variety of Chinese noodles exist, generally made from either wheat flour, rice flour, or mung bean starch. Also there are many recipes made from Chinese noodles but Chicken Chow Mein or Chicken noodles are one of the most favorite Chinese noodle dishes which attracts food lovers all across the globe.

Following Chicken Chow Mein recipe is inspired from authentic Chinese way of cooking chicken noodles but with a twist of veggies which will certainly suit your taste buds.

Ingredients:

  • 1 lb Chinese noodles
  • 2 cups chicken stock
  • 11/4 tbsp soy sauce
  • 1 tbsp dry fortified wine (Sherry)
  • 1/4 tsp white pepper
  • 1 tbsp cornstarch
  • 1 tbsp ginger, finely grated
  • 1 tbsp minced garlic
  • 3/2 cup onions, thinly sliced
  • 11/2 cup Chinese mushrooms, thinly sliced
  • 11/2 cup Chinese green onions, cut into small pieces
  • 1/2 cup bean sprouts
  • 1/2 cup cabbage, finely chopped
  • 1/2 cup green bell pepper, finely chopped
  • 1/2 cup baby carrots, peeled and finely chopped
  • 1 tsp fresh ground black pepper
  • 2 tbsp canola or vegetable oil
  • Salt as per taste

Method:

Marinate chicken strips in soy sauce, wine, white pepper, corn starch, salt & garlic and set aside. Heat water in a large sauce pan over medium-high heat and bring water to boil. When water starts boiling, put 1 tsp oil into the water then drop noodles and steam them. When noodles are done, fluff them, drain and allow to cool.

Mix dried cooled noodles and veggies. Take a baking sheet of sufficient size and put aluminium foil all over the sheet base. Grease the sheet slightly and spread noodles and veggies ( green bell pepper, cabbage, carrots) mixture uniformly over the sheet. Put the oven to broil at medium -high level and broil noodles, veggies for about 5-6 minutes each side until get crisp.

Meanwhile, heat a wok over medium-high heat. Boil chicken stock in the wok then add ginger, onions & mushrooms in the broth and allow it to cook for next 1-2 minutes. Now add chicken pieces and again cook for next 1-2 minutes. Add bean sprouts in the wok and stir fry for 4-5 minutes. Turn off the heat. Pour chicken mixture over baked noodles-veggies & season with pepper. Crunchy, spicy Chicken chow mein is ready to serve.
