Chicken Pilaf

Thinking what to cook today? Or do you have yesterday’s left over rice? Here’s a recipe that you can change you rice into. A very good crowd pleaser guaranteed. Make it in advance, doesn’t take up much time at all.

Chicken Pilaf

  • 2 Chicken fillet pieces cut in Strips
  • 2tbsp oil
  • 1 onion roughly chopped
  • ¼ green pepper chopped
  • ¼ red pepper chopped
  • 2 garlic cloves crushed
  • A small piece of ginger grated
  • Salt and pepper
  • 1tsp Chili powder
  • 1 green chili
  • 1tsp cumin powder
  • 2 tomatoes chopped
  • A handful of peas
  • 1 cup Cooked rice

Method

Heat the oil in a wok, add the garlic and ginger. When light brown add the onion and fry until transparent. Add the spices, and fry it a bit.

Add the tomatoes.

Cover and leave it to simmer covered for about 10 mansards the green, red pepper, peas to the mixture. Give it a swirl and add the rice.

Stir it in nicely and leave covered for 2 mins.

It is now ready. Serve and Enjoy!
