Cheesy Mushroom Chicken Mini Quiches

Quiche is a classic dish from French cuisine but it was actually originated in Germany. The word ‘quiche’ comes from the German word ‘Kuchen’ which means cake. Today, quiche has become a regular snack in parties or family gatherings. Lots of variations could be done with quiche recipes in terms of ingredients as well as in terms of presentation. So, instead of making a full pan sized quiche pie, lets make mini, bite size “Cheesy Mushroom Chicken Quiches” which is an excellent finger food recipe idea.


  • 1/2 cup cooked chicken pieces, thinly sliced
  • 3 medium sized eggs
  • 1/2 cup baking mix
  • 1/4 cup fresh spinach, chopped
  • 1/2 cup mushrooms, chopped
  • 1 cup shredded sharp cheddar cheese
  • 1 tbsp dried onions, minced
  • 1 tsp minced garlic
  • 2 tbsp fresh chopped cilantro or parsley leaves
  • 1/3 cup melted butter or olive oil
  • 1/4 cups sour cream
  • 3/4 cup milk
  • 1 tsp crushed red chili pepper
  • Salt as per taste

Preheat oven at 350 deg F. Combine eggs, baking mix, salt, garlic, spinach, onions, cilantro / parsley, sour cream, milk and melted butter / olive oil in a large mixing bowl. Blend all the ingredients together in a blender and make a smooth mixture. mix chicken slices in the blended mixture.
Grease a mini-muffin tins baking sheet. Fill the mixture into each muffin cup and top with chopped mushrooms and sprinkle crushed chili flacks. Put the baking pan into the oven and let it bake for approx. 40 minutes. turn off the oven, take the pan out and allow it to cool for 10-15 minutes.
