American Style Dry Butter Chicken

Traditional Asian butter chicken recipes, specially Indian butter chicken, refers to rich curry chicken cooked with lots of butter but the butter chicken recipe being discussed here refers to dry, curry free butter chicken in which chicken is treated with salty crackers, bread crumbs and lots of butter and prepared by baking in the oven instead of deep frying.

This dry butter chicken could be used as an excellent finger food recipe for small parties and events as well. Moreover, one can prepare this amazing chicken snack easily and quickly at home any time as most of the ingredients used in the recipe must be simply available in your home kitchen already.


  • 5 boneless, skinless chicken breasts, halves
  • 3 large size eggs
  • 1 stick of salt-less butter, cut into slices
  • 3/4 cup bread crumbs
  • 1 cup salty, butter rich crackers crumbs
  • 1 tsp garlic powder
  • Salt as per taste
  • Fresh ground pepper as per taste
  • Crushed red chili peppers as per taste


Preheat oven at 375 deg F. In a large shallow dish or bowl, combine bread crumbs & crackers crumbs then add salt, black pepper, garlic powder, crushed red pepper as per taste and mix well all the ingredients together. Beat the eggs in a separate bowl.

Slightly grease a baking pan. Dip the chicken breast into the egg and then coat it well with crumbs mixture and place them one by one into the baking pan. Put lots of butter slices around the chicken pieces. Put the pan inside the oven for next 45 minutes. But after 15-20 minutes, coat the chicken pieces with more melted butter, if needed, using a brush and flip them over other side. Bake well, until chicken is cooked golden brown from all the sides and the juices start running out clear.

Crispy, juicy butter chicken is ready to serve. Serve hot with red onion – lemon salad and your favorite dipping sauce or chutney.
