Healthy & Delicious Avocado Corn Soup

There are number of recipes to make different kind of soups like the following is the recipe for a Mexican style corn – avocado soup which is made from ripe avocados puree and mixing it with kernel corns, garlic & lemon juice and using basic vegetable stock as the base for the soup. This is one of the most easy, healthy and tasty avocados recipes. Try this simple soup recipe at home and get appreciations from others.

Ingredients

  • 2 medium size ripe avocados
  • 1 cup boil and crushed kernel corns
  • 6 cups pre-prepared vegetable stock / broth
  • 3 cloves ¬†of garlic, peeled and crushed
  • 1 tbsp of fresh lemon juice
  • 1/2 tsp fresh ground black pepper
  • 1 1/2 tbsp fresh cilantro, finely chopped
  • 1 tbsp oil/butter
  • Salt as per taste
  • Fried noodles for garnishing (optional)
  • Roasted bread crumbs for garnishing (optional)

Method

Wash and peel the avocados, remove the pit from it and cut slices. Place the avocado slices, vegetable stock, lemon juice and salt into the blender and make a smooth puree out of it.

Next, heat butter in a non stick pan over medium heat. Add crushed garlic cloves into the pan and saute for few seconds then add prepared avocado puree, mix it with a spoon and cook for few seconds then add corns and let it cook until starts steaming. Sprinkle salt and pepper to season. Garnish it with chopped cilantro leaves, fried noodles or bread crumbs and serve it hot.
